Easy No Bake Cherry Cheesecake Recipe – Simples Recipe Ever

I am completely and utterly captivated by cheesecake! The fact that I have a large number of cheesecake recipes on my blog is certainly something that you have noticed if you are a follower of Manila Spoon. I am unable to recall the precise number, but I would assume that it is quite near to ten.

INGREDIENTS

For the Crust

  • 2 cups graham crackers or digestive biscuits, crushed
  • 2 tbsp sugar
  • 8 tbsp butter (salted), melted

For the Cheesecake

  • 8 oz each of 2 packs of Philadelphia cream cheese, softened at room temperature
  • 14 oz can of condensed milk
  • 2 tbsp fresh lemon juice
  • 2 tsp vanilla extract

FOR THE TOPPING

  • 12.5 oz can cherry pie filling, (or other pie filling of your choice)

INSTRUCTIONS

With regard to the Crust The crust can be made by combining all of the ingredients in a bowl and mixing them together until they are uniformly moistened. The smooth bottom of a glass should be used to press the crumb mixture into the bottom and side of a springform pan that is 9 inches in diameter and has been oiled.

Make certain that it is distributed uniformly. When you are making the filling, place the mixture in the refrigerator for about ten minutes so that it may chill. Because of the Cheesecake The cream cheese should be beaten with an electric mixer at a medium speed until it is entirely smooth, creamy, and soft (with no lumps that are visible).

Slowly incorporate the condensed milk into the mixture while continuing to whip it until it is completely smooth. It is important to scrape the sides of the mixing bowl on a regular basis to ensure that there are no lumps left on the sides or at the bottom of the containers.

Pour in the vanilla extract and lemon juice, and continue beating until the ingredients are almost completely incorporated. After pouring the filling into the crust, place it in the refrigerator for at least one night, or until it has completely set. A day or two in advance, this can be prepared. Make sure you sprinkle some of the cherry pie filling over the top of the pie just before serving.

NOTES

A handmade crust can be produced by placing nine sheets of graham crackers in a food processor and pulverising them until they are the consistency of fine crumbs. It is estimated that approximately one and a half cups of graham cracker crumbs will be produced.
After adding ⅓ cup of sugar, 6 tablespoons of melted butter, and ¼ teaspoon of ground cinnamon, thoroughly blend all of the ingredients that have been added. Set aside the graham cracker mixture after pressing it into the bottom of a pie plate measuring 9 inches in diameter.
If you so wish, you are free to substitute a handmade cherry pie filling for the recipe that calls for a canned version. There are a variety of pie fillings that you might try topping with, such as blueberry, strawberry, raspberry, peach, and so on.
