  • 4 tbsp honey

Instructions

Toss the chicken pieces with salt and cornstarch to cover them all over. Over medium heat, make the oil in a big skillet very hot.

Place the chicken in a single layer and leave it to cook for 6 minutes, without moving it, until the bottom is very brown.

The first side is where most of the cooking will happen. Turn it over and cook for two more minutes. Don’t worry about cooking it all the way through yet.

Mix honey, chicken broth, and soy sauce together in a bowl, and set it away. Move the chicken to the side of the pan.

In the empty part of the pan, cook the ginger and garlic for about two minutes, until they are soft. Add the honey mixture and coat the chicken by stirring it around.

Set it on low heat and let it thicken for another two to three minutes. The temperature inside the chicken should be 165oF. Put green onions on top and serve.

Notes

Usually, the cornstarch that is still on the chicken is enough to thicken the sauce. But if your chicken loses a lot of water, which can happen if it was frozen, you can mix 1 tablespoon of cornstarch with 1 tablespoon of water to make a slurry. Add this to the sauce that is already cooking, and it will get thicker right away.
